01 - In a medium bowl or jar, add the rolled oats, milk, Greek yogurt, chia seeds, maple syrup, lemon zest, lemon juice, and vanilla extract. Stir until thoroughly combined and no dry patches remain.
02 - Gently fold the blueberries into the oat mixture, distributing them evenly without crushing the fruit.
03 - Cover the bowl or jar tightly with a lid or plastic wrap. Place in the refrigerator and let it rest overnight, or for a minimum of 6 hours, allowing the oats to absorb the liquid and soften.
04 - In the morning, remove from the refrigerator and stir well. If the mixture is too thick, add a splash of milk and stir until it reaches your preferred consistency.
05 - Top with chopped nuts, additional blueberries, and extra lemon zest as desired. Serve chilled straight from the refrigerator.
