- Preheat oven to 350°F. Line a 9x5-inch loaf pan with parchment paper or grease thoroughly with cooking spray or butter.
- In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger until well combined. Set aside.
- In a large bowl, mash bananas until smooth. Add grated carrots, brown sugar, oil, eggs, vanilla extract, and milk. Whisk until fully incorporated.
- Gently fold dry ingredients into wet mixture using a spatula. Mix just until no dry streaks remain, being careful not to overmix.
- Fold in walnuts or pecans and raisins if desired, distributing evenly throughout the batter.
- Pour batter into prepared loaf pan and smooth the top with a spatula for even baking.
- Bake for 50-55 minutes until a toothpick inserted into the center comes out mostly clean. A few moist crumbs are acceptable, but wet batter indicates more time needed.
- Let bread cool in the pan for 15 minutes. Remove from pan and transfer to a wire rack to cool completely before slicing.
