01 - Place lemon juice, lemon zest, Dijon mustard, garlic, honey or maple syrup, salt, and pepper into a medium bowl or a jar with a tight-fitting lid.
02 - Whisk vigorously or shake the jar to combine the ingredients evenly.
03 - Slowly drizzle the olive oil into the bowl while whisking continuously, or pour all oil into the jar and shake until the mixture is thickened and emulsified.
04 - Taste the dressing and add more salt or pepper if desired to balance the flavors.
05 - Use immediately or refrigerate in a sealed container for up to one week. Shake or whisk well before serving.
