# What You'll Need:

01 - 1.5 lbs baby potatoes or Yukon Gold potatoes, diced
02 - 2 tbsp olive oil
03 - 1 tsp smoked paprika
04 - 1 tsp garlic powder
05 - 1/2 tsp ground cumin
06 - 1/2 tsp chili powder
07 - Salt and black pepper, to taste

08 - 1 cup shredded cheddar cheese or Mexican blend

09 - 1 cup canned black beans, drained and rinsed
10 - 1 cup cherry tomatoes, quartered
11 - 1/2 cup corn kernels, fresh, canned, or thawed
12 - 1/2 cup sour cream or Greek yogurt
13 - 1 ripe avocado, diced
14 - 1/4 cup chopped fresh cilantro
15 - 2 green onions, sliced
16 - 1 jalapeño, thinly sliced

# Steps:

01 - Preheat oven to 425°F. Line a baking sheet with parchment paper.
02 - In a large bowl, toss diced potatoes with olive oil, smoked paprika, garlic powder, cumin, chili powder, salt, and pepper until well coated.
