01 - Combine granulated sugar and water in a small saucepan. Heat over medium heat, stirring continuously until sugar dissolves completely, about 3 to 5 minutes. Avoid boiling.
02 - Remove saucepan from heat and allow syrup to cool to room temperature.
03 - Incorporate pure peppermint extract and optional green food coloring into the cooled syrup. Stir thoroughly to combine.
04 - Transfer the mixture into a clean glass bottle or jar. Seal tightly and refrigerate until chilled.
05 - Shake well before each use. Serve chilled in beverages, desserts, or as a flavor enhancer.
